potato mixture into the center of the hollowed Jack-Be-Littles, until it reaches the top, about 3 to 5 ounces per pumpkin. Place in a 425-degree Fahrenheit oven for 10 minutes, then lower the temperature to 350 degrees Fahrenheit, and continue to cook until the potato mixture is golden brown and heated through, about 15 minutes. Serve immediately.

To make ahead: Prepare the mashed potato mixture and spoon it into a greased 1-1/2-quart casserole dish. Cover; chill up to 24 hours ahead of serving time. Before serving, stuff the hollowed pumpkins (see step #1 above), transfer the pumpkins to an ungreased baking sheet, and bake in a 325-degree Fahrenheit oven for 20 to 25 minutes or until the mashed potato mixture is heated through.
