Fish Tacos

Before you wrinkle your nose like I did the first time I even thought about fish in tacos, try this recipe out for size. I happened to come across it from a good friend of mine. In fact, when she fed this dish to me, she made me close my eyes to taste it, and it was WONDERFUL!!!

1lb. Cod or Mahi-Mahi (Yes this is Dolphin Fish, but it's not really like eating Flipper)
3 Tomatoes chopped
1 Onion finely chopped
Paprika, to taste
3 Cloves of Fresh Garlic minced
2 Tbsp Olive oil or Butter
1 cup of Jack Cheese
I cup lettuce chopped

1. In a large sautee pan add 2 tbsp. olive oil, onions, tomatoes and garlic.
2. Cook for about 1 minute. Add fish and cook for 5 minutes until soft.
3. Add paprika. Grill tortilla until soft.
4. Add fish and salsa, jack cheese and lettuce.
