All of these recipces can be easily doubled for more than one person
1 1/4 cup (310 ml) chicken stock 1 scallion (spring onion), thinly sliced 1 tsp (5 ml) lemon juice 3 cooked artichoke hearts, fresh, frozen, or canned, cut into bite-sized pieces Sea Salt and freshly ground pepper to taste 2 Tbs (30 ml) heavy cream Bring the stock, scallion, and lemon juice to a boil over high heat.
Add the remaining ingredients and return to the boil, stirring
occasionally. Serves 1. Guacamole for One Mash the avocado with a fork in a small bowl. Stir in the remaining
ingredients. Serve with tortilla chips. Serves 1.
Lemon-Glazed Carrots for One 2 medium carrots, peeled and cut into 1/4-inch (5 mm) rounds Boil the carrot slices in salted water until tender, about 8 minutes.
Drain and transfer to a skillet over moderate heat. Add the remaining
ingredients and cook, stirring frequently, until lightly glazed, about
