Banana Fritters

I have no idea where this recipe came from, so if anyone knows, let me know so I can give you credit! I tried it and it's WONDERFUL!!!!! Then again, I adore banana's of anykind!

The first time I tasted banana fritters I was a little girl. My Nana made them for me. She also made apple fritters that day. I will always remember the crunch of the batter, and the soft warm squish of the banana as I bit in to my first fritter.

This recipe is super easy, and kids, don't fry at home without adult supervision okay?

The only thing missing, is lemon juice. You might want to dip your banana slices in lemon juice, it prevents browning. Enjoy!!!

Banana Fritters

1 cup sifted all-purpose flour
1 tablespoon sugar
1/2 teaspoon salt
2 eggs

1/2 cup milk
2 tablespoons vegetable oil
6 medium firm, ripe bananas
Oil -- for frying
Confectioners' sugar

Into a small bowl sift flour, sugar, baking powder and salt. In another small bowl, beat eggs, milk and oil together with a rotary beater or whisk. Combine liquid ingredients with dry ingredients; stir until all flour is moistened.
Slice bananas in half lengthwise; dip into batter using fingers. Drain any excess butter. Drop bananas into at least 2 inches hot oil (375 degrees F. on deep frying thermometer) in a deep skillet or deep-fat fryer. Fry a few at a time, turning once, 2 to 3 minutes or until golden brown. Drain on paper towels. Serve immediately, sprinkled with confectioners' sugar.
Yield: 8 servings.
