This came to me via email -- and I thought it was very fitting. So proud to be an American!
3 lbs. red or white potatoes 1/2 cup onion, chopped 1/2 cup celery, chopped 1 Tbsp. parsley 6 eggs, hard-boiled and chopped Salt and pepper 1/2 tsp. celery seed 1/2 tsp. paprika plus 2 cups mayonnaise 1 egg, hard-boiled and sliced Cook potatoes in their skins until they can easily be pierced with a fork. Let cool, then peel skins off. Cut into cubes and place in a large bowl.
Add all ingredients except mayonnaise and sliced egg and combine thoroughly.
Add mayonnaise and mix well to coat.
Spoon into a serving dish and smooth the top. Sprinkle with additional paprika and garnish with sliced egg. Refrigerate until well chilled. Makes 6 to 8 servings. Enjoy!
