Ida's Gazpacho Recipe© My friend Ida:)
64 oz container of V-8 (or Tomato Juice) (I use the "healthy" kind, but use what you like) CHILLED
1 to 1-1/2 cups chopped (fresh) Onion (Sweet Vidalia is best) 1 to 1-1/2 cups chopped (fresh) Green Pepper (you can mix with yellow pepper) 1 to 1-1/2 cups chopped (fresh) Cucumber (I always make it 2 cups, because I *love* cucumbers) 2 to 3 cups chopped (fresh) Tomatoes (I *love* tomatoes) A couple of chopped Garlic cloves to taste (garlic powder works in a pinch) 12 oz Wishbone Italian Dressing Basil (because I like it -- just add about a tablespoon or to taste) 2 or 3 tablespoons of Worcestershire sauce Salt & Pepper to taste Sour Cream to taste Big, Crunchy Croutons to taste Mix [chopped] Onions, Peppers, Cucumbers, Tomatoes & Garlic all together. Add V-8 (or tomato juice). Add Italian Dressing, Basil, Worcestershire, salt and pepper. Stir. Serve Chilled with Sour Cream, and Thick, Crunchy Croutons on hot summer days. You can also modify the recipe with more (or less) of whatever you like. For example, cucumbers and tomatoes are my favorites, so I add a little more. The "colorful" nature of the meal is part of what makes it delightful, especially when you have "fresh picked" from either your garden, or a local roadside stand. This is the best way I know to get my "fresh veggie" alotment. WARNING: I *hate* raw onions and peppers, but *love them* in Gazpacho.
