CARBONADA EN ZAPALLO

I do so love mixing fruit and meats, and I found this and the author was kind enough to allow me to publish it. I can't wait to try this myself! It sounds utterly delish!

My name is Kerry and, although born in England, I am married to an Argentine and have lived in this lovely country now for 21 years so think an Argentine recipe is called for. When I first arrived I discovered that it was true that most of the population only ate meat, bread and potatoes! Over the years though it has slowly been changing although no one would turn down a wonderful asado made with our grass fed beef! Most of the classic recipes centre around beef, and I hope you all will try this one which is very tasty and, although it sounds complicated it is really is just a roasted pumpkin filled with a stew. It makes a wonderful dinner party centre piece.

CARBONADA EN ZAPALLO (beef stew served in a pumpkin)
Serves 4-6

1 Pumpkin weighing 5 kilos
Butter or oil
1/2 cup milk
1 tablespoon sugar
1 kilo stewing beef cut into cubes
3 fresh corn cobs cut up into 4 or 5 slices
1 onion sliced
2 carrots cubed
2 tomatoes peeled and quartered
1 red and 1green pepper chopped roughly
1 glass white wine
1 bay leaf
sprig of rosemary
1 teaspoon of paprika
5 peaches sliced (or you can use pears)

Wash and dry the pumpkin then cut the top off (may have to use a saw) to leave you with a sort of serving dish with a lid. Remove the seeds and butter inside well, sprinkle with the sugar and milk pricking the inside with a knife so that both penetrate (be careful not to puncture the pumpkin or it will leak!). Cover with the lid and cook in a moderate oven for an hour and a half. Meanwhile in some oil brown the meat and then add the onion. When soft add the carrots, tomatoes, peppers, wine, bay leaf, rosemary and paprika. Cover and simmer until the meat is tender. 10 minutes before serving add the corn and peaches or pears. Pour into the pumpkin and return to the oven for another 10 minutes. When serving include a piece of the pumpkin with each portion.
