Alace Chicken

One of my really good friends is a superb gourmet cook, although she won't admit it. She passed this recipe on to me, and it's fabulous!

ALSACE CHICKEN

Melt 1/2 c butter with 2 large cloves of garlic in sauce pan, when cool enough to touch, add 7 tsp dijon mustard whisk together to thicken slightly.

In a separate bowl, mix together 10 Tbs dried parsley, 10 Tbs dried parmesan cheese, and 3 cups coarse fresh bread crumbs.

You also need - 2 lbs or 8 chicken breast halves.

Dip the chicken in butter mixture then in bread crumb mixture place on broiler pan or shallow pan bake in 350 oven for approx 30 min.

Serve with a dollop of sauce (recipe follows) and curry raisin rice. (recipe follows

SAUCE

1/4 cup mayo
2 tsp-2 Tbs dijon mustard (I like 2 Tbs)

CURRY RAISIN RICE
Combine and simmer all ingredients until liquid is absorbed.

1 c uncooked white rice(I prefer Japanese rice)
2 Tbs butter
1/2 tsp curry powder (more if you like curry)
2 c chicken broth(low sodium works great)
1/8 tsp salt
1/8 tsp pepper

(These next ingredients I add about half way through the cooking time but the recipe says to add at the very end just to warm them)

2 chopped bananas (optional:I usually don't add) 1/2 cup raisins 2 Tbs orange juice concentrate 1/2 cup slivered almonds
