New Years Eve Yummies!


I found a slew of recipes for News Year's Eve, and New Years Day. So take what you need, and leave the rest, and Happy New Years! My hope is that the year 2000 will bring all of you health, wealth, happiness, and love.

BROILED SHRIMP APPETIZER

Allow 3 to 4 of the large shrimp per person. If only the smaller are available, you will need about 6 per person.

30 large shrimp
1 cup olive oil
juice of 3 lemons
1/4 cup low sodium soy sauce
1/4 cup finely chopped parsley
3 tablespoons of fresh or dried tarragon

With sharp scissors cut down the back of each shrimp shell and remove the black vein but do not remove the shell. Wash the shrimp thoroughly and place them in a large bowl. Over them pour olive oil, the lemon juice, soy sauce, parsley and tarragon. Let the shrimp stand in this mixture for 2 hours, tossing them around now and then so that they will be equally marinated.

When you are ready to cook them, arrange them in basket grills and cook over hot coals for 5 to 6 minutes, turning twice. They should be tender and moist with lightly charred shells. Have finger bowls and pass plenty of paper napkins.

If you would like to server something more formal on New Years, I found a simple, yet delicious recipe for Prime Rib.

PRIME RIB

3 cloves minced garlic
2 teaspoons freshly ground pepper
1 Tablespoon worcestershire sauce
1 teaspoon Lowery's seasoning salt
1 bag (5 lb.) rock salt

Sprinkle fatty cap of roast with Seasoned Salt and worcestershire sauce. In heavy roasting pan, spread rock salt evenly over bottom; place wire roasting rack, fatty side up. Make sure no salt actually touches the beef. Insert meat thermometer in thickest part of meat, making sure it does not touch a bone. Roast in preheated 350°F oven until thermometer registers 130°F for rare, 140° for medium, or approximately 20 to 25 minutes per pound. Remove from oven and let stand 20 minutes before carving. Using a sharp carving knife, slice meat across grain for serving. Discard rock salt. Makes 6 to 8 servings. Serve with horseradish

WHIPPED CREAM HORSERADISH

1 cup whipping cream
¼ teaspoon Lawry's Seasoned Salt
2 tablespoons prepared horseradish, well drained
or 4 tablespoons finely grated horseradish root Dash Tabasco sauce

Whip cream until stiff peaks form. Fold in Seasoned Salt, horseradish and Tabasco until well mixed.
Makes 6 servings

PROSCIUTTO-WRAPPED SCAMPI

12 uncooked jumbo shrimp, peeled deveined
1/2 cup dry white wine
