Left over Turkey - what do I do with it?


Ok tell me -- what's the best part of Thanksgiving? The Left overs of course! First of all let's talk about some safety tips regarding the handling of your left overs.

Safety Tips for any Holiday Leftovers

Chill leftover turkey right away. This can be done simply, by placing your turkey in small containers, for quicker cooling times.

Leftover turkey can be refrigerated for about 3 days. I wouldn't let it go any longer. Leftover stuffing and gravy should be used within 2 days maximum.

You can freeze the leftover turkey, wrapped tightly, for 30 days. I use the 3 step wrapping method. I wrap the inside layer first with saran wrap, or other plastic wrap, I then wrap again in foil, and finally place this all in an air tight glad large sandwhich bag. Gravy and stuffing can also be frozen for 30 days.

To freeze for longer periods, use the turkey in casseroles, soups or other dishes that freeze well. You will then have prepared meals in the freezer for those busy days when you don't have time to cook a full meal.
