Spinach Pie


I used to hate spinach. I mean I really hated it. To heck with Popeye the Sailorman, for all I cared Bluto could kick his rear end from here to New York and I wouldn't care.

As I became older I discovered Spinach Salads, and they were "O.K.", I tolerated them at best.

When I started cooking seriously as an adult and creating recipes, I scoured every resource available to me, to find recipes I could duplicate, change, get ideas from, or make my own.

I found this recipe a while back, and it's by one of my favorite Chef's: "Minnie Giraldi"

Before you turn your nose up at Spinach like I used to, give this recipe a whirl! -- You'll be pleased!


Spinach Pie

2 portions of pizza dough for small pizza
1/2 cup olive oil and oil for greasing pan
3 garlic cloves
dash of red pepper
1 can of anchovies
3 pkgs. of frozen spinach - salt and pepper to taste
1 long baking dish (12 x 8) Pyrex or baking pan

In a saucepan have water 3/4 full. Let come to a full boil - add spinach - cook boiling rapidly 8 minutes - drain. In a skillet put olive oil, garlic cloves. Let brown slowly - add anchovies - dash of red pepper and with wooden spoon stir until anchovies melt.
Grease Pyrex dish with olive oil. Stretch 1 portion of dough until it fits the bottom of Pyrex dish. Remove garlic from skillet and add the sauteed spinach to the skillet. Spread it evenly over the dough. Cover the spinach with other portion of pizza dough. Oil the top of the dough - add black pepper and bake in oven 350 degrees until crust is nice and brown.

Let cool and cut into squares to serve as an appetizer.
