Holiday Appetizers with a Song!!!


I came across this goodie and will print as is:

This came off of a magazine cover (Gourmet?) over 30 years ago so I cannot claim originality, however, I have kept it in my recipe book all these years because I like it so well:

The American Cook's National Hymn
(sung to the tune of "America the Beautiful")

"Oh beautiful for Apple Pies,
for burgers, cheese and plain,
for fries that "French" still modifies
from Idaho to Maine.
More beautiful for oysters raw
for crab and speckled trout
(I'll take that larger lobster claw
and thee may do without.)
America, America,
Thy ketchup hold in check,
and take due care,
thy steaks are rare
and each Martini sec!

Spanish Dates with Ham

24 small strips thinly sliced Prosciutto or other smoked ham
24 pitted dates
Wrap the ham around the dates and arrange on a serving platter. Makes 24 appetizers.

Danish Horseradish Ham Rolls

1/2 cup (125 ml) heavy cream
1 tsp (5 ml) sugar
2 Tbs (30 ml) prepared horseradish
1/2 cup cooked macaroni
6 to 8 slices cooked ham
1/4 cup (60 ml) grated Swiss cheese

Whip the cream until stiff and add the sugar and horseradish. Gently
fold in the cooked macaroni and spread the mixture on the ham slices.
Roll the ham into tubes and secure with toothpicks if necessary. Arrange on a serving plate and sprinkle with the grated cheese. Makes 6 to 8.
