At this time of year, shashlik stands appear all over the the former Soviet Union. Shashlik, erroneoulsly called shish kebab by the ignorant & the uninformed westerners are simply meat cubes skewered with some vegetables & cooked over an open fire or bed of coals. Kebabs are also cooked on skewers but they are small meatballs of ground meat mixed with herbs and called "shash kebab." In the Republik of Georgia shashlik are called basturma as well. Shashlik originated in Asia and travelled along the Silk Road as it was the way the caravan traders cooked their meats. Shashlik was established as a major food type during the Mongol occupation of eastern Europe & Russia and is today is the single most enjoyed food of the summer months in the former Soviet Union.
Shashlik is a simple food form. Basically is cubes of meat skewered on steel or wooden skewers then cooked over either, an open fire or a bed of coals. Now in modern times it is also cooked in a broiler but the taste is lacking when it is prepared this way. It is made from many kinds of meat. Lamb, mutton, beef, venison, pork, camel. horse, goat all are used. In the Islamic areas of Central Asia & the Crimea, pork. of course. is not used nor is it used among the Jews in areas of the Caucusus Mountains. Included in this article are several shashliki recipes.
