Rus Cuisines: Palate Pleasing Salads


Salad-Vegetables
4. Season with salt & pepper.

Title: Salat Iz Kapusty - Cabbage Salad aka Slaw
Categories: Ethnic, Russian, Salad, Vegetable, Sidedish
Yield: 6 Servings

1 ea Cabbage head firm & white approx. 1 1/2 lbs.
1 ea Onion medium
1 ea Granny Smith apple lg.
1 c Mayonaise
4 tb Carrot shavings very thin
1 tb Sugar
1 ts Salt

Core & julliene cabbage & apple.
Mince onion very fine.
Combine in a large bowl with mayonaise, carrots, sugar, & salt.
Chill & serve chilled.

Title: Tomato & Cucumber Salad

Yield: 6 Servings

6 ea Tomatos firm medium
3 ea Cucumbers 4"-5" peeled
1 tb Vinegar
1/2 c Sour cream
1/2 ea Onion medium sized
Salt & ground black pepper To taste
1 tb Dill fresh chopped fine
2 tb Sunflower oil or corn oil

De-stem tomatos, 1/4 them & place in a large bowl.
Slice cucumbers & onion then combine with oil & sour cream in a bowl.
Chill & serve.
Sprinkle with dill as you serve.

Title: Salat Iz Yaits - Egg Salad

Yield: 4 Servings

1/2 c Mayoniase homemade is best
6 ea Eggs hardboiled & chopped
1 ea Garlic clove minced
1/3 c Sour cream or plain yogurt
1/4 ts Salt
1 tb Pimiento chopped as garnish

2 tb Scallion tops finely chopped 1/4 ts Hot mustard Chinese

Mix sour cream/yogurt, mayonaise, salt, & garlic together.

Add egg then other ingredients & mix well.
Garnish with pimiento.

Title: Roz Kartoshka Salat - Pink Potato Salad
Categories: Russian, Ethnic, Salad, Vegetable, Ukrainian
Yield: 8 Servings

3 ea Eggs hard-boiled chopped
2 lb Potatos peeled cooked cubed 1/2"
1 ea Beet Lg. peeled cooked 1/2" cubed
1 ea Cumcuber peeled & diced
1 tb Capers
2 tb Olive oil
3 tb Cider vinegar
3 ea Scallions chopped
4 tb Dillpickle relish
1 ts Salt
1/2 ts Black pepper
1/2 c Sour cream or plain yogurt
3/4 ts Dill dried chopped

Put beet cubes & potato cubes into large bowl.
Add sour cream/yogurt, salt, pepper & capers.
Mix gently then add remeaining ingredients.
Mix gently but well. Cover and refrigerate 8-12 hrs.
