Rus: Zakuski the Appetizers of the Rus - Part 2


Bliny Formal Serving
pepper, & vinegar.
Cook for 4 mins. then add remaining ingredients.
Stir constantly until it thickens.
Remove from the heat. Add lemon juice & serve over fritters.

Title: Tartar Fried Cucumbers w/ Sour Cream Sauce

Yield: 6 Servings



6 ea Cucumbers large
-OR-
20 ea Cucumbers small
1 ea Egg
2 c Cream
Salt to taste
1 ts Black pepper fresh ground
1 ea Onion med. minced
5 tb Vegetable oil
2 c Sour Cream
1 tb Red pepper flakes
1 ea Garlic clove minced
3 tb Dill fresh chopped

Peel & slice cucumbers 1/4" thick.
Beat egg & mix into cream with ½ of the minced onion, salt & pepper.
Dip slices into egg-cream mixture.
Be sure to completely coat each slice.
Fry in pre-heated oil until golden brown.
Mix the sour cream with remaining onion, dill, red pepper & garlic & serve as a dipping sauce.

Title: Vorozhnikiy - Cottage Cheese Pattie

1 lb Cottage cheese*
2 ea Eggs beaten
1 ts Lemon juice
1 ts Lemon zest
1 c Sour cream
1 1/2 tb Sugar
-OR-
1 1/2 Splenda
4 tb Flour
1/2 ts Salt
1/2 ts Cinnamon

*NOTE: Squeeze all moisture from cottage cheese in a cheesecloth bag.

Put cheese through a fine sieve & mix with eggs, sugar, flour, lemon zest, lemon juice & 3 tb of sour cream.
Add flour by the spoonful mixing continuously & mix until it is very smooth & thick.

Refrigerate covered for 1 hr. then using a melon scoop out balls & place on a floured surface. Press these balls into flattened, oval patties approx. 3/4" thick & fry on both sides in
melted butter.
Serve immediately after placing dollops of sour cream over each serving.

*NOTE: An excellent & delicious alternative is to use a chocolate or hot fudge sauce in place of the sour cream topping.
