Next to running, something that is always of great interest to runners is food. And with that in mind, I have posted two easy recipes that runners have sent me. These seem perfect for the cold weather of winter, whether you live in the deep south or elsewhere. These are sure to warm you up after a long run. Enjoy!

(Prepare this prior to your 30 to 60 minute run and it will be ready to eat upon your return!)

Easy 1 Hour Waiting To Warm You Up Casserole.

I cup fresh or canned mushrooms

2 10 ounce cans of pre cooked chicken

1 can of mushroom condensed soup

1 package of frozen vegetables.

2 cans chicken broth

1 teaspoon parsley

1 teaspoon garlic

1/4 teaspoon black pepper

1 teaspoon celery flakes or celery salt

1 cup of barley or rice

1 cup water

Preheat oven to 350 - or allow 15 extra minutes cooking time. Pour ingredients into oven safe dish and bake covered for 60 minutes.

Serve with crusty bread and fresh butter.

Zesty Easy Make Chili

You will need to start this in the morning if you want it for lunch or dinner.

One Crock Pot, 5 or 6 quart size

4 cans tomato pieces or stewed tomatoes

2 cups cubed meat or ground meat

4 Tablespoons chili powder

1 teaspoon garlic

1 tablespoon parsley

1 large onion, diced

2 large cans cooked red beans OR (one small package dry kidney beans which you will need to soak over night, then rinse & drain before using)

2 tablespoons sugar to cut acidic level

2 cups water

1 cup grated cheddar cheese for topping

After you brown the meat (this can be done the day before) combine all
