Ode to Chocolate

Whether delicately drizzled over pastry, artfully lined inside a heart-shaped box, or seductively submerged upon the tip of a strawberry, chocolate is renowned, world-wide, as the ultimate sensual food. Connoisseurs of this delectable luxury may have specific preferences to: Swiss, Dutch, bittersweet, cocoa, semi-sweet, milk, dark, or white chocolate. However, true "Chocolate-a-holics" tend to mirror Pavlov's dogs upon the sight, scent, or even notion of virtually every type or form.

Most people know that chocolate, like coffee, is derived from tropical beans. Chocolate beans, however, are made from the seeds of cacao trees, found predominantly in Africa. No, that wasn't a typo! Actually, a spelling mix-up is what originally led cacao to become known as cocoa. Although its uses and forms have changed and expanded throughout history, chocolate has held a timeless charm as a treat for the palette. Originally used only in beverages, it then became associated with medical treatments, used in cakes, powders, and ultimately, candies.

Since chocolate contains large amounts of caffeine, it is thus associated as an energy booster. Still, the neurological effects go much further than commonly known. Pre- menstrual women frequently crave chocolate...and for good reason. During this time, females may feel frazzled as a result of naturally depleting large amounts of Serotonin. The cravings are really the body's response to replace this brain-transmitter . Chocolate just happens to act a calming agent, since it contains Serotonin. Another predominant ingredient and brain chemical is phenylethylamine. PEA has been referred to a "drug" since it raises both heart rate and blood pressure when it enters the bloodstream. Likewise, the brain emits PEA when feelings of love and/or passion arise. Those euphoric feelings of falling in or being in love can also be felt from consuming chocolate, because it releases endorphins into the body.

All research in mind, chocolate apparently can be addictive in its own *sweet* way! Still, adding a few pounds is the greatest harm. If this holds you back from frequently indulging, consider the newer, health-conscious options. Tootsie Rolls are--and always have been--fat free! (Why weren't we advised of that one sooner?!) There are also dietetic and sugar free versions of virtually all chocolate treats. Cocoa, pudding, brownies, cakes, ice cream and cookies all come in at least one fat free variety. Just be careful to ensure the sugar and/or caloric content doesn't make up for the fat loss. What the heck...do as I do...skimp on fat with the rest of your diet, and ALWAYS vow to leave room for a little chocolate delight to reward yourself. While your at it, indulge you special someone as well, and increase the passion two-fold!
