Beef Enchiladas

Ingredients:

1 lb. ground beef
1 15 oz can black beans
2 cloves minced garlic
1 4.5 oz green chilies (optional)
2 10 oz cans red enchilada sauce
1 8oz can black olives
1 cup grated cheddar cheese
1 cup grated mozarella cheese
6 flour tortillas

Preheat oven to 350 degrees.

Brown ground beef and drain fat.

Mix 2/3 of the enchilada sauce and 1 cup of the combined cheeses with the ground beef.

In a medium bowl, mix together beans, garlic, olives and chilies.

Lay tortillas on flat surface. Evenly dispurse ground beef and bean mixtures onto each tortilla.

Roll up and place seam down in a greased 9x13 inch baking dish.

Pour remaining enchilada sauce and cheese over the top.

Bake for 25 minutes.
