Chicken Quesadillas

Ingredients:
4 burrito sized flour tortillas
1 boneless skinless chicken breast, cooked
1 cup grated Monterey Jack cheese
1/4 cilantro
non-stick cooking spray

1. Place two of the tortillas on a flat surface.

2. Spread half of the chicken, cheese and cilanro on one of
the tortillas- Spread the remaining half of the ingredients on the other tortilla.

3. Top each one with the remaining two tortillas.

4. Spray a large skillet with the non-stick cooking spray and cook quesadillas one at a time, on medium heat, until cheese is melted. About 3 minutes on each side.

5. Cut each quesadilla into fourths. Making a total of eight wedges.

Serve with: salsa and sour cream

Additional Ingredients:
green chilies, sun-dried tomatoes, olives, hot sauce, onions
