Mexican Shells

Ingredients:
1 pkg jumbo pasta shells
1 lb hamburger meat
1 pkg taco seasoning mix
¾ cup water
2 cups cheddar cheese
1 -16 oz can refried beans
1 -16 oz can red enchilada sauce

Directions:
1. Preheat oven to 350 degrees

2. Boil pasta shells according to directions on package

3. Brown hamburger in a large frying pan, drain

4. Add taco seasoning and water to hamburger meat, simmer until mixture thickens

5. Stir in beans and 1 cup of cheese, stir over heat until smooth

6. Prepare enchilada sauce according to directions on can

7. Spread ½ of the enchilada sauce over the bottom of a greased 13x9" baking dish

8. Fill pasta shells with beef mixture (no more than 2 tbsp per shell)

9. Place filled shells in baking dish and pour remaining
enchilada sauce over top

10. Sprinkle with remaining cup of cheese

11. Bake 30-35 minutes. Let stand 5 minutes before serving

Optional Garnish: sour cream, olives, salsa, onions
