4 chicken breasts (with skin on)
1 cup mozzarella cheese 4 tbsp. parmesan cheese 2 tsp. minced garlic 2 tsp. basil 2 tsp. oregano ½ tsp. salt ¼ tsp. pepper 2 tbsp. butter parsley 1. Heat oven to 375 degrees. Grease 13x9" pan. 2. Loosen skin from chicken breast halves by inserting fingers between skin and meat. Separate in center, leaving skin attached at ends. 3. Divide cheeses, garlic, basil and oregano into fourths (ex: ¼ cup of mozzarella cheese, 1 tbsp. of parmesan cheese for each) - stuff ingredients between meat and skin of each breast. Smooth skin, tucking under loose ends. 4. Place chicken, skin sides up, in pan. Sprinkle with salt and pepper. Drizzle with melted butter. 5. Bake uncovered for 45-55 minutes or until juice runs clear. Garnish with parsley. Serves 4 Suggested toppings: top cooked chicken breasts with spaghetti or marinara sauce, parmesan cheese, or additional mozzarella cheese.
