Potato Skins

Ingredients:
4 medium potatos
2 cups grated cheddar cheese
5-6 slices cooked bacon, crumbled into bits
1/8 cup chives or green onions
1/2 cup sour cream
1/4 cup melted butter (1/2 stick)
seasoning salt

1. Wash potatoes and poke each one about 5 times with a fork. Bake potatoes for 1 hour in a 400 degree oven. Let cool for about 10 minutes.

2. Cut each potato in half. With a spoon, scoop out most of the inside of the potato, leaving about 1/3 inch around the skin.

3. Brush entire potato halves with melted butter.

4. Sprinkle seasoning salt on the skins of the potato halves.

5. Place potato halves on a baking sheet and broil in oven for about 10 minutes, or until brown and crisp.

6. Sprinkle cheese, bacon bits and chives inside each potato half.

7. Broil for 2-5 minutes, or until cheese is bubbly.

Serve on a platter with sour cream on the side.
