You don’t have to be a magician to make these quick and easy-to-prepare recipes! These are some great recipes that were featured last week on the Busy Moms Recipes list:

CHEESY CHICKEN

INGREDIENTS:

5 tbsp. butter or margarine – melted and divided
1 cup crushed cheese-flavored snack crackers
¼ tsp. pepper
4 boneless, skinless chicken breast halves
½ cup sour cream

DIRECTIONS:

Place 1 tbsp. of butter in an 11x7x2” microwave safe dish and set aside. Combine cracker crumbs and pepper. Dip chicken in remaining butter, then spread with sour cream. Roll in crumb mixture. Place in prepared dish and cover loosely. Microwave on high for 6-7 minutes or until chicken juices run clear. Let stand for 5-10 minutes before serving.

FILET OF SOLE

INGREDIENTS:

1 /4 cup sliced almonds
1 /4 cup butter or margarine
2 tbsp. lemon juice
2 tbsp. white cooking wine
1 /2 tsp. dillweed
1 /2 tsp. salt
1 pound filet of sole or other white fish - fresh or frozen (defrosted)

DIRECTIONS:

Microwave almonds and butter in 2 qt. dish on HIGH for 5-6 minutes, or until almonds are slightly toasted; stir halfway through. Stir in lemon juice, wine, dillweed and salt. Arrange fish in butter mixture, turning to coat well. Cover with plastic wrap. Microwave on HIGH for 5-6 minutes, or until fish flakes easily. Let stand covered for 2 minutes.

BAKED APPLE

INGREDIENTS:

1 Apple, about 8 oz -- cored and peeled
2 tb Orange or apple juice -- (unsweetened)
1/8 ts Ground cinnamon
1 pn Grated nutmeg
2 tb Raisins

DIRECTIONS:

Core and peel each apple. Place each apple in individual glass casserole, fill center with raisins, pour juice over raisins. Sprinkle with cinnamon and nutmeg. Cover (wax paper) and bake in microwave on high about 2 min (CHECK - your apples could be different) until tender. Serve warm.

MICROWAVE CAKE

INGREDIENTS:

1 box spice cake mix (or yellow cake mix if you don't care for spice)
1 20 oz. can apple pie filling
4 eggs DIRECTIONS:

You can mix this in a bowl or right in a microwaveable bundt pan.

Mix all of the ingredients in a bowl or a greased (I use Pam) microwaveable bundt pan. Bake at high power for 5 minutes and on 50% power for 5 minutes. The top will be a little wet looking. It should be firm to touch, like a cake baked in a conventional oven. It will continue to cook after you take in out of the microwave. Don't overcook. Let cake sit for 5 minutes and then turn out on plate.

NOTE: Frost with powdered sugar or your favorite frosting.
