Nah! This is a tasty American menu, but a few of the dishes have an Italian twist...

ROUND STEAK PARMESAN

INGREDIENTS:

1 lb. round steak
1/2 cup flour
1 pkg sliced mozzarella cheese
1 jar thick spaghetti sauce
2 tbsp oil
salt and pepper

DIRECTIONS:

Slice steak into thin individual serving pieces and dip them in the flour. Brown on both sides in a heavy skillet with heated oil. Place in casserole dish that has been coated with non-stick spray, making sure the pieces do not overlap one another. Lay mozzarella slices on top of steak, and spread spaghetti sauce on top of cheese. Bake at 350 degrees for one hour.

ITALIAN EGGPLANT

INGREDIENTS:

1 small eggplant
1/4 cup Egg Beaters
1/2 cup Italian seasoned bread crumbs
1 - 1/2 cups spaghetti sauce

DIRECTIONS:

Remove peel from eggplant and slice into circles. Dip circles in Egg Beaters, and then into bread crumbs. Put each circle in a non-stick skillet sprayed with cooking spray and brown each side. Then place in a casserole dish, ut a heaping tablespoon of spaghetti sauce on each circle. Can stack on top of each other if necessary. Cover and bake at 350 degrees for 30 minutes.

MUSHROOM BREAD

INGREDIENTS:

8 oz. refrigerated crescent rolls
2 cups sliced mushrooms
3 tbsp butter or margarine (melted)
1/4 cup Parmesan cheese (grated)
1/4 tsp Italian seasoning

DIRECTIONS:

Spread out dough on baking sheet lightly sprayed with cooking spray and let sit for about 5-10 minutes (easier to work with). Then pinch seams together. Mix mushrooms in with the melted butter and spread mixture over the dough. Sprinkle on the Parmesan cheese and Italian seasoning and bake at 375 degrees for 20-25 minutes. Cut into squares when done and serve while hot.

FETTUCCINE ALFREDO

INGREDIENTS:

1 pkg. (12 oz.) fettuccine
1 stick (1/2 cup) butter or margarine
2/3 cup sour cream
1/2 cup Parmesan cheese (grated)
1 egg yolk slightly beaten

DIRECTIONS:

While cooking pasta according to package directions, melt butter in medium saucepan. Remove saucepan from heat and slowly stir in Parmesan cheese, sour cream and egg yolk. Mix sauce with drained pasta and toss to thoroughly coat.

ORANGE-PEAR SPINACH SALAD

INGREDIENTS:

2 cups fresh spinach leaves
2 cups leaf lettuce
1 can sliced pears (drained)
1 can mandarin oranges (drained)
Herbed Balsamic Vinaigrette (chilled in fridge)

DIRECTIONS:

On a serving platter arrange spinach and lettuce. Top with mandarin orange and pear slices. Before serving, add dressing; toss to coat.

LEMON COOKIES

INGREDIENTS:

1 box lemon cake mix
1 stick butter or margarine (softened)
8 oz package cream cheese (softened)
1 egg

DIRECTIONS:

Mix together all ingredients until well blended. Drop by teaspoonful onto lightly greased cookie sheet. Bake at 375 degrees for 10-12 minutes.
