Saucy Chops!


Remember the famous way that Humphrey Bogart would say, "Pork chops and applesauce," while clinching a ciggie between his teeth? I don't either, but Peter Brady sure did a great imitation on The Brady Bunch many years ago. And this menu features just that: Pork Chops and Applesauce, along with a few other accompaniments, that hopefully even Bogart would approve of. Hope you enjoy!

PORK CHOPS & APPLESAUCE

INGREDIENTS:

6 pork chops
1 cup applesauce
1/4 cup soy sauce
1/4 tsp dried minced onion
salt and pepper to taste

DIRECTIONS:

Brown chops in skillet and put in baking dish. Mix together applesauce, soy sauce and onion. Spoon 1/2 of this mixture on chops. Bake 20 minutes in a 350 degree oven, turn chops and spoon on remainder of sauce. Return to oven for another 20 minutes.

NOTE: Serve with Uncle Ben's Five Minute Rice, prepared according to package directions. Super easy!

ORIENTAL MEDLEY

INGREDIENTS:

1/2 pound snow peas (trimmed)
1/2 cup carrots (peeled and sliced)
1/4 cup mushrooms (rinsed and sliced)
1/2 cup chicken broth
1 teaspoon soy sauce
1 teaspoon cornstarch
1 teaspoon cooking oil

DIRECTIONS:

Heat oil in a nonstick skillet (may want to spray with cooking spray first). When oil is hot, saute snow peas, carrots and mushrooms for 2 minutes. Then add broth and bring to a boil. Cover and simmer for 5 minutes or until veggies are crisply tender. Dissolve cornstarch in the soy sauce and add to veggies. Stir everything together over medium heat until sauce thickens. Serve immediately.

SUGGESTION FOR LEFTOVERS:

Cut the pork chops into strips, stir fry in 1 tbsp oil. Then add leftover veggies (cut up more if needed), and heat thoroughly (about 2-3 minutes). Serve over leftover rice.

TRIPLE CHOCOLATE BROWNIES

INGREDIENTS:

1 box instant chocolate pudding
1 box chocolate cake mix
12 oz pkg. chocolate chips

DIRECTIONS:

Prepare instant chocolate pudding according to package directions. Mix together with chocolate cake mix and package of chocolate chips. Can add nuts, if desired.

Pour in prepared jelly roll pan (large cookie sheet with 1" sides). Bake at 350 degrees for 15 to 20 minutes. Cool and dust with 10-X sugar. Cut into squares.

Great topped with vanilla ice cream and chocolate syrup for brownie sundaes.
