New Year's Day Menu

Here’s a easy-to-prepare New Year’s Day menu that include “green” spinach (for money) and “lucky” black-eyed peas. And, of course, the traditional ham and sweet potatoes – plus more!

CHINESE SPINACH SALAD

INGREDIENTS:

1 bag spinach leaves (rinsed and dried)
11 oz can mandarin oranges
Sesame seeds (roasted and hulled)
1/4 cup sweet/sour dressing
6 spring onions (chopped)
1 can Chinese noodles

DIRECTIONS:

Drain oranges and put with spinach in a large salad bowl, adding chopped onions. Pour dressing into salad bowl and gently toss to coat spinach, oranges and onions. Garnish with noodles and sesame seeds.

BLACK-EYED PEA SOUP

INGREDIENTS:

1 can black-eyed peas
½ can water
1 can beef broth
¼ cup crumbled bacon
½ tsp dried minced onion
¼ tsp minced garlic
salt and pepper to taste

DIRECTIONS:

Empty blacked-eyed peas and ½ can of water in a saucepan and bring to a boil. Then let simmer for 30 minutes. Remove ¼ cup of the peas and mash them up with a fork. Add back to the saucepan with the remaining ingredients, heat thoroughly and serve.

HAM W/STRAWBERRY GLAZE

INGREDIENTS:

1 jar (12 ounce) strawberry preserves
1/4 cup vinegar
2 tablespoons corn syrup
1/2 tsp. cinnamon
1/4 tsp. nutmeg

DIRECTIONS:

Bake ham 30 minutes for every pound at 325 degrees. In a saucepan combine all ingredients. Bring to a boil. Reduce heat; simmer 2 minutes; stirring frequently. About 15 minutes before your ham is done, spoon 1/4 to 1/3 cup glaze over ham. Repeat is desired. Stir 2-3 tbsp. water into remaining glaze; heat through and serve with ham.

GREEN BEANS & CHEESE

INGREDIENTS:

2 cans green beans
4 oz. pkg. Velveeta
1/2 cup sliced almonds
1/4 tsp. dillweed
salt & pepper to taste

DIRECTIONS:

Cut cheese into cubes and mix with green beans, dillweed and 1/4 cup sliced almonds in a casserole dish. Cook in oven at 350 degrees approximately 20 minutes (or until cheese is melted). Add the remaining 1/4 cup sliced almonds the last 5 minutes.

Q&E SWEET POTATOES

INGREDIENTS:

2 15 oz. cans of sweet potatoes (drained)
2 tbsp. softened butter or margarine
2 tbsp. orange juice
2 tbsp. brown sugar

DIRECTIONS:

Mash up sweet potatoes with a fork. Add butter, orange juice and brown sugar and mix together well. Put in a baking dish that has been sprayed with Pam and bake (covered) for 30 minutes at 350 degrees. Then uncover and add marshmallows on top (or you can leave off the marshmallows) and put back in the oven for about 5 minutes until top is browned.

TWISTED BREAD STICKS

INGREDIENTS:

1 can refrigerated bread sticks (pre-cut)
1/4 cup Parmesan cheese
Olive oil

DIRECTIONS:

Open can, spread out sticks (do not separate) and let stand at room temp for about 15 minutes to make more flexible. Then brush tops of strips with olive oil and lightly sprinkle with Parmesan cheese. Twist the strips into tight spirals (cheese inside) and put on baking sheet sprayed with cooking spray. Bake at 400 degrees for 10 minutes, or until golden brown.
