What's in the Dish?


A kindergarten teacher asked her students to bring something that was related to their religion to class. At the appropriate time she asked the students to come forward and share with the rest of the students.

The first child said, "I am Muslim and this is my prayer rug."

The second child said, "I am Jewish and this is my star of David."

The third child said, "I am Catholic and this is my rosary."

The final child said, "I am Southern Baptist and this is my casserole."

For those busy days when you there's only enough time to quickly throw something together, try one of these casserole - one dish meals:

CHICKEN CASSEROLE
(This is a great one that my mom has been making for years!)

INGREDIENTS:

3 cups chicken - cooked and cubed
1 can cream of mushroom soup
1 small can mushroom (drained)
1/2 cup water
1 cup herb stuffing

DIRECTIONS:

Spray 8x8" square casserole dish with cooking spray and spread 1/2 of cubed chicken on the bottom. Mix together soup, mushrooms and water and pour 1/2 of mixture over chicken. Spread 1/2 cup stuffing (more if needed) over soup until that layer is covered. Repeat with layering chicken, soup mixture, then stuffing. Cook at 350 degrees for 30 minutes.

SWEET CHICKEN & RICE

INGREDIENTS:

1 pound boned and skinned chicken breasts -- cut into strips
1 tablespoon margarine -- melted
1/4 cup fresh parsley -- chopped
1/4 cup brown sugar
1 clove garlic -- minced
3 cups rice -- cooked

DIRECTIONS:

Preheat oven to 375 degrees.

Place chicken strips in a baking dish. Combine brown sugar, margarine, parsley and garlic. Mix chicken with the sugar mixture. Bake for 30 minutes, turning after 15 minutes and basting with the liquid from the pan. Serve over rice.

PINEAPPLE CASSEROLE

INGREDIENTS:

1 Large Can Chunk Pineapple - Reserve Juice
¾ Cup Sugar
3 Tbs. Flour
1 Stick Margarine - Melted
3 Tbs. Pineapple Juice
1 Cup Shredded Cheddar Cheese
1 ½ Cups Finely Crushed Ritz Crackers

DIRECTIONS:

Drain Pineapple. Mix Flour and Sugar together, add 3 Tbs. of reserved juice making a paste. Mix paste, pineapple and Cheese. Combine melted margarine and cracker crumbs, sprinkle over pineapple mixture. Bake 20 Minutes at 350 degrees.

SAUSAGE EGG CASSEROLE
(This is a great recipe passed down by my Aunt Linda)

INGREDIENTS:

1 can refrigerated crescent rolls
1 pound lean sausage
2 cups mozzarella cheese (grated)
6 eggs
3/4 cups milk
salt and pepper

DIRECTIONS:

Line bottom of 9x13" greased pan with crescent dinner rolls - flat. Bake flattened rolls 5-8 minutes at 375 degrees. Brown sausage, drain off excess grease. Add grated cheese, slightly beaten eggs, milk, salt and pepper. Pour sausage-egg mixture over rolls. Bake at 425 degrees for 15 minutes, or cook on lower heat at 375 degrees for 25-30 minutes. This should set for 5-8 minutes before serving, as the cheese will be runny when hot.
