What's in the Bread Basket?

In this week's article, you'll find a huge assortment of bread, muffins and biscuits! Come on and dig in!

BANANA NUT BREAD

INGREDIENTS:

3 cups biscuit mix
3 /4 cup sugar
3 /4 cup chopped nuts
3 medium bananas (mashed)
1 /2 cup milk
1 egg

DIRECTIONS:

Mix together sugar, egg, milk and nuts. Add mashed bananas, then biscuit mix.. Pour mixture into a greased loaf pan and bake at 350 degrees for 45-50 minutes.

BEER BISCUITS

INGREDIENTS:

3 cups biscuit mix
1 tsp sugar
1 /4 tsp salt
1 1 /2 cups beer (room temp)

DIRECTIONS:

Mix together all ingredients and spoon into 12 greased muffin cups. Bake 15 minutes at 425 degrees.

GREAT SMOKY HONEY MUFFINS

INGREDIENTS:

2 tablespoons honey
4 tablespoons melted shortening
1 egg
2 cups flour
1/4 cup milk
4 teaspoons baking powder
1/2 teaspoon salt

DIRECTIONS:

In large bowl combine honey and shortening. Add well-beaten egg. In separate bowl sift and mix together dry ingredients. Add to first mixture alternately with milk. Beat well. Half fill greased muffin pans and bake in moderate oven (400 degrees) 25 minutes. Yields 12 muffins.

HOMEMADE WHITE BREAD

INGREDIENTS:

1 pkg. dry yeast
2-1/2 cups lukewarm water
1 tsp sugar
1-1/4 tsp. salt
1/3 cup sugar
1-3/4 tbsp. shortening
7-8 cups flour

DIRECTIONS:

Dissolve the yeast and sugar in 1/2 cup lukewarm water. Mix 2 cups water, salt, sugar and shortening in a large bowl. Add the yeast mixture to it and, gradually, the flour. Knead until smooth and elastic. Placed in a greased bowl, cover, and set in a warm place to rise until double. Punch down. Let rise again. Put into large loaf pans or three medium-sized ones. Let rise again until double. Bake at 350 degrees for 1/2 hour.

BISCUITS WITH PIZZAZ

INGREDIENTS:

1 cup self-rising flour
1 cup whipping cream (do not whip)
3 tbsp sugar

DIRECTIONS:

Mix ingredients together until smooth. Pour into a mini-muffin pan that has been sprayed with cooking spray. Bake for 10 minutes (or until golden brown) at 400 degrees.

ONION BISCUITS

INGREDIENTS:

1 can refrigerator biscuits
2 tbsp. melted butter or margarine
2 tbsp. instant minced onion

DIRECTIONS:

Combine butter and onion and let stand for a few minutes. Arrange biscuits on an ungreased baking sheet. Make a depression in the center of each biscuit with the back of a spoon or the bottom of a small glass. A rim will be formed when baked. Fill each depression with 1 teaspoon of the onion-butter mixture. Bake at 450 degrees for 8-10 minutes or until biscuits are done and onion is toasted.
