Whether serving family, friends, neighbor, or in-laws, these easy to prepare appetizers are sure to please!

CHEDDAR MUSHROOM CAPS

INGREDIENTS:

1 pound large fresh mushrooms
1 pound cheddar cheese (cubed)
Paprika or Garlic (your choice)
Salt

DIRECTIONS:

Rinse mushrooms and remove stems. Sprinkle cavities with salt. Place a cheese cube in each mushroom cavity, then sprinkle with paprika or garlic. Put mushrooms on baking sheet and broil 2-3 minutes, or until cheese bubbles.

PEPPERONI BITES
The cream cheese filling cools the spiciness of the pepperoni. These are so easy!

INGREDIENTS:

Pepperoni slices
Cream cheese spread (plain or pineapple)

DIRECTIONS:

Place a dab of cream cheese on each slice of pepperoni and fold in half.

SPICY WALNUTS

INGREDIENTS:

2 tbsp vegetable oil
1-1/2 tbsp dried thyme leaves
1/2 tsp hot pepper sauce
1 lb. (4 cups) shelled walnut or pecan halves
1/2 tsp salt

DIRECTIONS:

Mix together oil, thyme and hot sauce. Then add nuts and stir together until well coated. Place the nuts in a single layer on a large baking sheet. Scrape any oil or thyme that remains in the bowl over the nuts, then sprinkle on salt. Bake for 8 to 10 minutes (or until brown) at 425 degrees.

PORT WINE CHEDDAR DIP

INGREDIENTS:

12 ounce cream cheese, softened
12 ounce container of port wine cheddar spread, softened

DIRECTIONS:

After cheeses are softened, cream together, adding milk for consistency. Let chill for about 2 hours. Leave out 30 minutes before serving.

MARINATED FRUIT COMBO

INGREDIENTS:

3 cups cantaloupe and/or honeydew melon balls
1 (13 3/4 oz.) can pineapple chunks, drained
1 cup strawberries, hulled
1 (6 oz.) can grapefruit juice
1/4 cup orange marmalade
2 tablespoon orange liqueur

DIRECTIONS:

Advance Preparation: Combine melon, pineapple, and strawberries. Combine remaining ingredients; pour over fruits. Stir gently. Chill 1 - 2 hours. Stir occasionally. Makes 6 cups.

CHERRY TOMATOES WITH SMOKED OYSTERS

INGREDIENTS:

1 basket cherry tomatoes
3 ounce can of baby smoked oysters

DIRECTIONS:

Wash tomatoes and remove stem. Slice each one vertically to within about 1/4 inch of base. Spread apart and slip in a smoked oyster.

BASIC SALSA

INGREDIENTS:

4 medium tomatoes (chopped)
4 oz can diced green chiles (drained)
1 /4 cup onion (chopped)
1 /4 cup cilantro leaves (chopped)
1 /8 tsp salt

DIRECTIONS:

Mix together all the ingredients and ta-da! Serve with tortilla chips.
