Sauces add a nice touch, flavor, even texture to foods. Portugal denotes special names to sauces that distinguishes the dish as particular. For instance, when you see a recipe that says "Portuguese Style", it means that the meal is made with a tomatoe sauce or a tomatoe mixture. If you see a tomatoe sauce "Portuguese style", than not only is there tomatoes but onions are prominent in the dish. Sauces can be made from wine, olive oil and wine vinegar; hot spices and even a home made mayonaise can be created. They can be hot, mild, medium, thick, thin, rich or quite vegetable based. Piri-Piri sauce is a popular sauce, spicy and hot it goes well with pasta, fish, meat and for flavoring stews. It 's quite easy to prepare. Take: 1 1/4 olive oil 8 chili peppers (no tops) 1 bay leaf 1 small piece lemon rind

Pour all the ingredients into a screw top jar. Shake well and leave at room temperature 24 hours before using. Keeps indefinitely.

The only time the term "Portuguese Style" does not refer to the addition of tomatoes is during the preparation of desserts. Than the term "Potuguese Style" refers to sauces heavy with eggs and milk. Most Portuguese sweet sauces comprise mainly of sugar syrups caramelized or sweetened with Port, custards poured over cakes,jams and preserves diluted or thick to add color and flavor to a pudding,cake or tart.
