The following recipe comes from the Madeira region of the Islands of the Azores. It is a common dish served as a sweet snack or dessert. It is good cold or hot.
1 lb cooked sweet potatoes 1/4 pint light beer 3 oz flour (90 gr) 1 large beaten egg caster sugar (icing sugar in North America) and cinnamon for sprinkling Pinch of salt Oil for frying Boil or bake the sweet potatoes in their jackets, until tender. Peel and cut into thick slices. Set aside. Prepare bater with the flour beer and egg. Beat until foamy. Mix the slices of potatoe into the butter. Warm up the oil to 182C/360 F and fry by the spoonful until golden turning once. Place on kitchen paper to absorb excess fat and sprinkle with the sugar and cinnamon to taste. Makes 18 sweets* * Recipe from The Taste of Portugal by Edite Vieira Stuffed Sweet Potatoes (Brazilian) 8 medium sized baked sweet potatoes 2 tablespoons butter 1/4 cup milk 1/4 cup light cream 1/4 cup grated cheese 1/2 cup chopped ham Seasoning, including nutmeg, if desired. Beate egg Grated cheese Cheese can be any mild tasting cheese. Seasoning is usually salt and pepper. Cut potatoes in halves lenghwish and scoop out the centers. Mash centers with the next 5 ingredients. Seaason to taste. Pile mixture into potatoe shells. brush with the beaten egg, sprinkle the grated cheese and brown in a 400 peheated oven for about 15 minutes. Now that's a dish all on its own. Go To Page: 1
