Batatas Douces ( Sweet potatoes)The sweet potatoe has been grown in the mild climates of Madeira ( The Azores) and the Algarve region of Portugal ever since they were brought to Portugal and the Islands by the explorers of South America. They are considered a staple in Portugal and the Islands. They are used as a complement to a dish and a main ingredient in cakes and cookies. Sweet Potatoes and yams are used as a frequent dish in Brazilian cooking as well both for main meals and desserts, especially candy. The easiest way to cook a sweet potatoe is to make several cuts in on an uncooked potatoe and place it in the oven as is at 400 for about an hour until the skin starts to puff up and loosen. The potatoe is deliciously sweet and can be eaten as is without butter or anything on top. Try it this way as a low fat alternative to buttered vegetables or potatoes.
