Rice is Nice


Rice is an important ingredient in Brazilian cooking. You will find many dishes which contain rice either as a side dish or mixed with black beans. Rice is also used extensively in Portugal and many delightful meals contain rice in various ways. You can even create a delicious dessert using rice which is very different from the pudding-like rice desserts we are familiar with here in North America. Rice pudding is available in many meditterrean countries and it is prepared in many ways, but Portuguese Rice pudding is a solid dish that you have to use a fork to eat it with. Smothered with cinnamon it delights the eye and tempts the taste buds. Rice is mixed with vegetables like rapini, finely chopped kale, beet greens or spinach to create beautiful emerald colored dishes that are eaten as a side dish or alone. Rice can be mixed with a mixture of tomatoe paste, chicken broth, seasonings, and chopped peppers and onion to create a dish that looks and tastes like Spanish Rice and is served as a side dish with Stewed Chicken. In Brazil it is a side dish served usually white, but mixed with black beans it takes on a whole new flavor and look. My next article will feature some recipes using rice. I hope you will enjoy them.
