Bread Stew - What to do with left over bread?Have you ever thought about what to do with leftover bread? In Portugal, bread can be used in a stew. You can add almost anything to this stew, but the most popular ingredients are olive oil, onion, eggs, and of course, the main ingredient, BREAD. You can use whatever bread you like, except that sliced sandwich bread does not have the body that country bread or french bread carries with it. Bread stew or Acorda (pronounced- asorda)has to resemble a soup and must have enough water to keep the bread from completely absorbing the liquid and turning it into a mush. It is popular in all regions of the country and a quick meal when you need something simple and comforting to stick to your ribs. Try a little chorico to add color and flavor. Here is a recipe my mother taught me. In a pot, add a little olive oil, some onion chopped and saute until golden. Add water (about four cups to start). Add torn up leftover bread and add until the mixture resembles a soup, not a mush. Add more water if the bread is absorbing the liquid too quickly. When it is boiling, break eggs (the quantity is up to you)into the liquid and cook until the eggs are done. Add salt to taste. It takes only a few minutes to make this, but it is a nice lunch for bread lovers and anyone else with curious taste buds. I hope you will try it.
