What Goes into Portuguese & Brazilian Cooking?


Before we enter the Christmas season and now that we have all had our coffee, whether it was a Bica or a Cafezinho, let's take a look at the kinds of meals popular to either Portugal or Brazil. We are going to explore not only individual ingredients that are predominant in these countries, but also look at whole meals prepared with these ingredients. Whether we are talking about cod and the different ways to prepare it or examining manioc flour; what it is and how it is used, we will find ourselves entering the realm of Portuguese and Brazilian cooking in many ways and at the same time we get to play tourist to the different regions of these countries and find out how they use their ingredients to create dishes that are so tasty, healthy, and appealing. Our first article will deal with Acorda (pronounced Asorda) or Bread based stew. Everyone taking notes? Get your wine glasses filled and your napkins at the ready. Let's cook!
