Celebrations- Brazil- July Part 2


As we enter into July we find ourselves deep into the Center west of the country and in the middle of the FESTA DE SAO BENEDITO (Festival of Saint Benedict), a day full of tradional danses and plenty of food. In the Northeast part of Brazil it is cowboy country and Brazilian cowboys share foods such as Manioc meal, QUEIJO DO SERTAO ( A goat's milk hard cheese) and candy made of chunks of brown sugar. The recipe below is a rice dish popular during this celebration.

BOLINHOS DE ARROZ (Little rice balls)*

1 egg, lightly beaten 1 small onion, finely chopped 1 green scallion, finely chopped 1 tablespoon fresh parsley, chopped 3 to 4 tablespoons flour 1/2 teaspoons salt 1 tablespoon milk 1 cup leftover rice Vegetable oil or frying

Mix together the egg, onion, scallion, parsley, flour, milk and salt. Add rice. Fry rounded tablespoons of the batter in hot oil until golden brown. Drain on absorbent paper.
