  • Eat them fresh - they are a very good laxitive. If you want to deliver 12 at once to friends and neighbours pick them straight into eggcartons. They bruise less and transport better.
  • Skin them and then puree them. This makes a good base for quickbreads.
  • Mix 500ml (2 cups) puree with 1 egg. Bake in a pie shell for fig pie.
  • The puree also freezes well.
  • Puree is good added to salad dressings. It makes a nice sweet vinagrette. Try adding tamarind for a bit of tang, and high-quality vinegar like apple cider or balsamic.
  • Fig Puree makes a mean, sweet BBQ Sauce for poultry. There is also a fig-blackbean marinade which is traditional Korean.
  • Fig makes chutneys rich. I am talking about British-style chutneys made of plums, with whole pepper cloves and more of that delicious tamarind. Rhubarb and Fig also makes a nice conserve.
  • There are many Spanish and Mexican Marmaladas which contain figs. Many have an apple base.
  • Puree them and make blender drinks. They're a crowd-pleaser and guests always feel like they're getting in on the ground floor of something fanstasic.
