The less hardy your Hardy Ginger (or any other out-of-zone plant you have) is, the more winter protection it will need. The point of winter protection is to trick the plant into beleiving it is still in a tolerable climate. There are many ingenious ways of providing frost protection to plants, including the much-renowned 'circle of chicken wire filled with leaves' technique.

When to do all this depends alot on your climate, so instead of using actual calendar dates, you can use signals in the natural world around you for clues as to when to winterize or summerize your plants. Add protection on the day of the first hoar frost. Take it off when the leaves on your local forest trees are unfurling. It's as simple as that!
