  • Pickling Onion - also known as Pearl Onions, these produce small bulbs which can be cooked or pickled whole.
  • Red Onion - also called the Italian Onion, they are often sweeter than white or yellow types.
  • Sweet or Slicing Onions - these are large, mildly flavoured, and best started from green sets or seedlings. They don't store well, but are delicious. Common types include Walla Walla and Vidalia.
  • Scallions - also known as Green Onions, Bunching Onions, Ciboule, or Welsh Onions. These plants form a slender white stalk instead of a bulb. True scallions will self-divide and live perennially.
  • Spanish Onions - these have large bulbs with mild flavour and are usually yellow or white skinned. In good climates bulbs can weigh up to 5 pounds.
  • Egyptian Onions - also called Catawissa Onions, they are very strongly flavoured and produce small onion bulbs atop tall stems. Plant these tiny bulblets next spring or fall to produce next year's crop.
