Strawberry Time

Today, New Hampshire welcomes late spring with a bounty of strawberries, wild and cultivated. It's also the time when the rhubarb is ready. Put them together and you've got a taste treat!

Strawberry Rhubarb Pie

1 1/2 cups sugar
3 Tablespoon quick cooking tapioca
1/4 teaspoon salt
1 1/2 teaspoon nutmeg

1 lb rhubarb (about 3 cups of 1/2 inch slices)
1 cup fresh strawberries sliced

Mix together: sugar, tapioca, salt, and nutmeg

Add rhubarb and strawberries to the mixture stirring to coat.

Let stand 20 minutes

Fill 9 inch pie crust with the mixture. Dot with butter. Lay on a lattice top. Seal the edges.

Bake in a 400 degree oven for 35 to 40 minutes

Get your strawberries here! Use the following sites to find a place to buy fresh strawberries or pick your own. Although broken down by county, I find it easier to search each of these using my browser's find function. Do be sure to call ahead. New Hampshire strawberries are usually ready by early to mid June. However, the weather may affect the dates when strawberries will be ready. Keep these URLs handy, blueberry season won't be far behind!
