With the amount of fattening food we consume from Thanksgiving to New Years, not to mention Hanukah and Kwanza. It is nice to eat something that's not swimming in fat. This is a cinch to make too.
1/2-1 cup shredded mozzerella cheese 1 2 1/2 ounce jar sliced mushrooms, drained 1/4 cup plus 1 tbsp plain low fat or no fat yogurt 1 tbsp green onions, chopped 1 tbsp parsley, chopped 4 boneless skinless chicken breasts 1-2 tbsp bread crumbs 1/8 tsp paprika Combine cheese, mushrooms, 1/4 cup yogurt, green onions and parsley. Pound chicken to about 1/8 inch thick. Spread 1/4 filling on each chicken breast, roll up and place seam side down in a baking dish. Combine bread crumbs and paprika. Brush the chicken with the remaining yogurt. Sprinkle with bread crumbs and bake about 20 minutes in a 350 degree oven, until chicken is not pink. Go To Page: 1
