Brazilian Black BeansI have to admit, I have never tried this recipe. I t was passed on to me by a friend of mine and sounds intriguing. It is the national dish of Brazil and is traditionally served on a Saturday. There are apparently scads of recipes among Brazilians, but this one is supposed to be fabulous. Brazilian Black Beans 8 cups dried black beans 3 pounds beef 2 pounds sweet sausage 2 pounds baby back ribs 2 bay leaves 1 large onion 2 cloves garlic 3 tablespoons olive oil Soak the beans overnight. The next morning, drain the beans and place in a large pot with water to cover by at least 3 inches. Bring the beans to a boil on medium heat. Cut the beef into 1-inch pieces. Cut the sausage into 1-inch pieces. Cut the ribs into 2-rib sections. Add the beef, sausage, ribs and bay leaves to the beans. Simmer for about 2 hours or until soft, stirring occasionally and adding water as necessary to keep beans covered. Sauté onion and garlic in olive oil until golden brown over medium heat. Add two ladlefuls of beans, mash them, and then add onion bean mixture back to the pot. This will thicken and season the beans. Continue to simmer gently for at least another hour, adding water as necessary. The beans are done when they reach a creamy consistency. Remove the bay leaves and serve over rice.
