Bamia

Eggplant Maqlooba
This Palestinian favorite can be made with lamb or chicken and any combination of eggplant, cauliflower and potatos. It is served over a bed of specially flavored rice.

Kafta be Tahina
Spicy Arabic meatballs cooked in a sesame sauce.

Kousa Mahshi
Zucchini stuffed with rice, meat and spices.

Musakhan
Another Palestinan favorite consisting of chicken, onions and spices served on top of a special flat bread.

Shark with Spices
This dish from the United Arab Emirates looks like a great alternative to regular fish.

Stuffed Chicken
Barbequed chicken stuffed with eggs, raisins, nuts and spices.

Stuffed Grape Leaves
Grape leaves stuffed with meat, rice and spices. Labor-intensive but well worth the effort. Get someone with experience to help you if it is your first time making this dish.

Babba Ghanouj
Roasted eggplant dip. It is traditionally served with bread but many Americans like to dip carrots and other raw vegetables in it.

Cauliflower with Tahina
Cooked cauliflower in a sesame sauce for a unique blend of flavors. Very easy to make.

Falafel
These are fried patties consisting of ground chick peas and other spices. A popular favorite in the Levant.

Fatoush
A Lebanese salad which has bread as its characteristic ingredient.

Hummous
Chick-pea dip topped with olive oil, parsley and spices. This dish is commonly eaten for breakfast in the Arab world.

Lentil Soup
It is traditional in many families to take a few sips of soup upon breaking the day's fast.

Persian Chicken Salad
Looks heavy enough to be a main meal. A healthy choice too.
