2. Add chicken, tomatoes and dressing to cooled vegetables with pasta; mix well.

Makes 5 (1-cup) servings. Now I don't know about you, but that's quick enough for me!!!

Salad can be as basic as lettuce and tomatoes, or you can throw everything in but the kitchen sink. I visited Diabetic Gourmet Magazine and found recipes for fresh peach salad and lemon-lime shrimp salad. You can also embellish on your salad meal with breads, fruits, cheeses, soups and wines. Thrive online has an excellent searchable recipe database. I fiddled around with it and came up with a recipe for orange onion salad with red chile dressing. I'm a big onion lover so that brought a smile to my face. I can't find enough stuff to do with onions, so I ordered an "onion" recipe book. Perhaps I'll share some recipes from it. In the meantime, enjoy your July dinners with a nice salad or two.
