Quick And Easy

With spring in full bloom and people wanting to take advantage of outdoor activities, sports, gardening, etc., I looked for recipes that were quick and easy. My best recipes this time of year are one-dish meals. I found the National Pasta Association's I Love Pasta home page. Their featured recipe of the month is "Shells with spring vegetables." They have a recipe database with 250 kitchen tested recipes. I found another site simply called Pasta Recipes. I can't swear that these are quick, but they certainly sound mouthwatering. Give them a try and e-mail me your favorites!!

Something else I love is mushrooms, I can't get enough of them. In my search for mushroom recipes, I found The Mushroom Coucil. Their page included sections titled "Retail Trade," "Foodservice News," "Shopper's Guide," "Educator's Corner" and my personal favorite, Recipe Index. Imagine a dish called grilled portabella mushrooms with Walla Walla onion relish, or China Town mushroom soup!!! Personally, you can fix them up any way for me, I have never met a mushroom that I didn't like.

I visited Aunt Libby's Kitchen to get a peek at her Salad & Vegetable recipes. I'm curious about hearty beef salad and ham salad. I'd like to try some new dishes this season and, with the Internet at my fingertips, there is no end to the new recipes that I can try.


My recipe entry for this month comes from Kraft Foods:

Easy Chicken Cacciatore

  • 1 pkg. (9 oz.) DI GIORNO Portabello Mushroom Tortelloni
  • 2 Tbsp. olive oil
  • 2 boneless skinless chicken breasts , cut into strips
  • 1 green pepper , thinly sliced
  • 1 pkg. (15 oz.) DI GIORNO Marinara Sauce
  • KRAFT 100% Grated Parmesan Cheese (optional)

    Preparation:
    ------------
    PREPARE pasta as directed on package.

    MEANWHILE, heat oil in large skillet on medium-high heat. Add chicken; cook and stir until browned. Add green pepper; cook and stir 1 minute.

    STIR in sauce; cook on low heat 1 minute or until thoroughly heated. Toss with pasta. Sprinkle with KRAFT 100% Grated Parmesan Cheese, if desired.


    During the warm months of the year I enjoy fresh fruits and vegetables, especially berries. I found a great site containing berry recipes. If you're a fruit fanatic like I am, please visit Hurst's Berry Farm. Some of the recipes there will blow you away!! You'll be pleased and you can bake me a Blueberry Cobbler to show your appreciaion. :] Perhaps you're tired of making the same old garden salad...well break free from your routine and visit Recipes for Green Salad. These recipes are sorted by alphabet, calories, cooking time, etc. I couldn't think green without visiting my friends at Green Giant - they have a great Salad Recipe site. They have piqued my curiosity with regards to "lemon herb shrimp and pasta" salad. There is so much variety that can grace our kitchens and I, for one, am glad. Now if you'll excuse me, all this food surfing has made me HUNGRY!!!!!
