Pot Luck

Today is Sunday and I am going to attempt to cook something for everyday of the week. Cooking for 7 days is a trip. But if you plan carefully enough it's not too scary. I got a good idea from the folks at Reynolds Aluminum. A commercial of theirs suggested that you put vegetables in aluminum foil, fold it up like a pack and put it in the oven. Why couldn't you do several days worth and freeze them? A TV dinner contains frozen cooked vegetables...right?

Don't forget I love my rice...I will cook two meals worth of rice any old time. What's to stop me from adding those pre cooked vegetables (I hate the word veggies, it's been done to death) some leftover chicken, my favorite sauce and VIOLA!! I've gotten so I bake 2 chickens every sunday and I do amazing things with them through the week.

Today in addition to my chickens, I'm making beef stew..yeah, it's Spring but we haven't had any all winter. With all the time saved throughout the week, you won't mind cooking one night. Or perhaps you'll feel you deserve to hang up the apron and call your Local Chinese Restaurant.

This month's recipe:

Broccoli/Cauliflower Casserole

You will need:

  • 1 (16 oz) pkg. of broccoli
  • 1 (16 oz) pkg. of cauliflower
  • 2 (15 oz) cans french style green beans
  • 16-24 oz shredded cheddar cheese
  • 2 (10 oz) cans cream of mushroom soup
  • 1 soup can of milk (not two!)
  • 1 small can french fried onions
  • Preheat oven to 375. Cook broccoli and cauliflower in 6 quart pot, drain off all water. Return to pot and add all ingredients EXCEPT french fried onions and 1/4-1/2 of cheese.Mix well, then pour into 2 (2qt) casserole dishes , sprinkle top with remaining cheese then top with french fried onions. Bake approx 35-45 min on middle to lower rack (so toppings do not burn) until golden on top.  Serves 10-12   great for making ahead for big dinners, and freezes well too! (Freeze without baking and leave off onions until time to bake)
