We know that after the holidays, there is leftover turkey at least in my small family, we always have it. Did you know there was a National Turkey Federation? Neither did I, but I found it while looking for turkey recipes though.
One of the nicest things about it is coming home and not having to cook. Who wouldn't take advantage of that? So I cut up vegetables (i.e., onions, peppers, mushrooms, etc), spray my skillet with cooking spray, stir fry my veggies, add cut up cooked "bird" and VOILA!! We're eating dinner in less than 30 minutes. There are a whole bunch of variations to this: serve over pasta, or rice with soy sauce, or a can of cream soup, or tomato sauce. That's my basic recipe thing; check out the turkey federation. This site boasts the best leftover turkey recipes on the planet in fact, that's its name. I think I'll try lattice-topped turkey pie. That sounds great!! This recipe from Michael and Ms. Weslie sounds good, so I thought I'd share it with you!
Cut carrots in half lengthwise; scrape halves into long strips, using a vegetable peeler; cut into two-inch pieces, set aside. Combine orange juice and next three ingredients in a small saucepan; bring to a boil, stirring constantly. Stir in turkey; cook 1 minute. Set aside. Bring 8 cups water to a boil in a large dutch oven; add fettuccine and cook 7 minutes or until tender. Add carrot strips and snow peas; cook 30 seconds. Drain well, and return to dutch oven. Add turkey mixture, mushrooms and remaining ingredients to fettuccine mixture; toss gently. Serve warm. Serves four. Folks, I have a busy week ahead of me, so I'm cutting this short.
