We're coming upon the holiday season. This is the time of year that I vow to not even think the 'd' word. I love holiday cooking, food, parties, beverages . . . etc. The older I get, however, the more I need to be mindful of what I eat. I can no longer throw caution to the wind and go crazy.

My kids and I love Halloween and I figure perhaps you do too. Probably not many low-fat recipes but hey, it's Halloween . . . . Halloween Recipes is a cute site, with all kinds of crazy recipes. There's one called "Diaper Dump Porridge," although I was too chicken to look that one up. If you're brave enough to try it . . . drop us a line and let us know what it's like.

But, the holiday season need not be bland and boring, foodwise. I am going to prepare to enjoy festive meals as I always do, but I'm going to do it with lots of low fat recipes. The one thing I said I would never bend on is dessert . . . but there are dessert recipes that are low fat and still very good. I got this recipe from the Halloween site and it sounds pretty good.

I also found healthy recipes from BlueCross/BlueShield I would trust that these good people know what they're dishing out :)

Flora's Lowfat Recipes

I love cranberries and I thought it would be nice to drop a cranberry recipe on you. This is Chef Ashbell's Cranberry Sauce.

He says, "I serve this sauce every Thanksgiving and any leftovers are used to top off slices of pound cake w/ a scoop of vanilla ice cream. The sauce is also great for grilled chicken or pork. Those who can't use sugar can substitute honey. Cranberries are so tart that a sweetener must be used.
Serves 6.

Ingredients

  • 4 cups of fresh whole cranberries, washed and stemmed
  • 1 med. whole orange, skin on, minced into small pieces
  • 2 inch piece of cinnamon bark, whole
  • 1/2 cup white raisons, optional
  • 1 cup of sugar
  • 2 cups of boiling water
