Mid week entertaining

OK, no more Mrs. Nice guy, I'm throwing a curve ball. We have a hard enough time wondering what we're gonna feed the family for dinner right? What about entertaining mid week? We've all had to for one reason, or another. It need not stress us out, thank God it's the 90's and we've got the web. I put myself in the position of having to cook an entertaining meal tomorrow night. On the web I was lucky enough to have found Katie's kitchen and now I have a lovely meal planned.

I can walk in my door at 6pm and have dinner served by 8pm. Now, guess who's coming to dinner....you are. That's right you're going to be my guests for a scrumptious meal. We'll start off with a Mexican cheesecake appetizer and chunky potato soup (recipes below courtesy of Katie's' Kitchen), these can be made 24 hours prior to serving. Isn't that wonderful? Then we'll move on to a simple salad of mixed greens, chicken breasts roasted with potatoes and carrots hot rolls and homemade iced tea.

First things first, knowing I have to have this lovely meal for tomorrow night, I decide to find out what I can prepare beforehand. Thanks to Katie and her marvelous 'web' Kitchen I find that I can make my soup and appetizer tonight. If you check out the recipes I've selected you'll see that they are pretty simple, but should pack one heck of a wallop at meal time. You'll think I slaved and slaved for hours 'how does she do it?' You'll wonder. These 2 just happened to command my attention as I checked out the soup and appetizer sections of this website.

Fast forward to the 'evening of the meal' (SCREECH SCREECH SCREECH SCREECH SCREECH SCREECH SCREECH SCREECH)...just kidding, I'm not panicked. Knowing that my appetizer and soup are done I come in from work, have my children set the table. You know how they love doing that :). I decorate my Mexican cheesecake, peel and cut my potatoes and carrots into medium sized cubes and arrange them in a shallow baking pan with the chicken breasts, onion slices, a bay leaf and toss that in the oven to bake at 350 degrees for 45 minutes. Not too much seasoning, as I'm not sure of my guests tastes.

Now I can tear up and mix the lettuce and spinach, and poof, it's a salad.. The iced tea is in the handy dandy iced tea maker and can momentarily be poured into my decorative insulated pitcher and my soup can be put over a low flame to simmer. The rolls can be warmed in the oven at the last minute (as long as I'm not too busy greeting guests and let them burn) Did I mention that they came fresh from the grocery store bakery? Hey, Betty Crocker I'm not :)
