will find the main challenge in these recipes finding substitutes for various plants and animals it is now either illegal or impossible to obtain.
Many years ago, a medieval cookbook was available from the Cloisters branch of the Metropolitan Museum of Art in New York. One recipe was for "garbage", i.e. cooked intestines. Though I have not checked, the Cloisters may still sell such a cookbook.
